Marian Apfelbaum spent the war in Warsaw, first within the ghetto, and then in the “Aryan” area, hidden by numerous Catholics. After the war, he came to Paris and became a physician and ultimately professor of nutrition. Until 1998, he was Director of Human Nutrition Studies at Xavier Bichat Faculty of Medicine. He has written numerous books in his field, including an encyclopedic dictionary of nutrition and a book on risks and fears in eating. He resides in Paris with his wife Laurence.
